Namaste! A hearty welcome toRuchkar Mejwani with Archana - Basic Cooking.
We tempt for chutneys as a side dishduring our meals!
So, today I will show you onesuch type of a chutney, 'Garlic Chutney'.
We have taken 2 and a half cups of grated coconut.
Let's roast it slightly.
Make sure that you do not roast it much, just till it's slightly golden brown.
We are done roasting, let's switch off the stove..
..and let's take it out in this bowl.
Let's roast these 15 to 20 dry red chillies.
Roast them just for a while.
These too are done, let's switch off the stove.
Now, let's roast 2 tbsp of sesame seeds.
Sesame seeds are roasted well,let's take them out.
Let's mix this now.
We will grind everything in a mixer.
Make sure you keep it coarse in texture.
Let's also grind these cloves of 2 Garlic (lasun) pods.
Now, let's add the roasted ingredients to it.
Now, let's add salt to taste.
Let's grind it once again.
Let's check if it's done.
Chutney is ready!
Loosen it in the mixer..
..and take it out in a bowl.
Garlic Chutney is ready!
Once you prepare this chutney..
..be rest assured about enjoying anaccompaniment with your meals for at least 15 days.

Add it to the grated coconut. - Then roast sesame seeds and add them too with coconut and red chillies. Toss everything well. - In a mixer grinder add garlic and grind it coarsely. - Then add coconut red chillies and sesame seeds mixture. Grind everything coarsely. - Add salt and grind again. - Remove the chutney in a bowl. Chutney is ready to be used.
